Q&A:
Q1: Do you have to use vacuum bags? Can you use roasting bags instead? Thanks.
A: While I'm not 100% sure, I would say yes if they are waterproof. The vacuum just helps keep the juices in the food you are cooking.
Q2: Is this new model waterproof? I thought it was a big downside that the electronic display etc. of the previous model were not waterproof.
A: No, it is waterproof, which is probably fine. I believe the "Model M820" is the only sous vide cooker that is actually waterproof (i.e. submersible) to IPX7 standards.
Q3: What is the 0.1 degree increment between the temperature settings?
A: Yes, I checked that this model allows 0.1 degree increments.
Q4: What is the largest container you can use with it?
A: There really is no limit, the larger the container, the longer it takes to heat the water
Q5: Can the bags be reused?
A: Yes, you can reuse the bags.
Q6: Can the vacuum bags be reused? If so, how many times?
A: I only use them once, but they are washable. I would use them more than a couple of times.
Q7: Is this device primarily for meat? Any success with vegetables or dishes (pasta dishes and casseroles) cooked in bulk and portioned/frozen in Food Saver bags?
A: Yes, sous vide is primarily for meat. It does not reach the rolling boil needed for pasta or the high temperatures of an oven (for casseroles). I suppose you could cook vegetables with it, but it would take a long time and I don't think the results would be satisfactory.
Q8: I can't see very well how bright the numbers are on the nano dial
A: The numbers are bright white on a black background, so this will give you the best possible contrast. Also, the numbers are very large, I can easily read them without glasses. You should have no problem with this device.
Q9: I want to buy this item with a 220V plug, do you have one?
A: Yes, the M820 comes with plugs: EU (220V-240V) / US (110V-120V).
